 Mmmmmmelt in your mouth CInnamon Buns
Cinnamon Buns – 2 doz
Dough: 1 cup water 1 cup milk ¼ cup butter 2 eggs ½ cup sugar 6 cups flour 1 ½ tbs yeast 1 ½ tsp salt (only if baking with unsalted butter!!) Filling: 1/3 cup softened butter 2-3 tsp ground cinnamon ¾ cup white sugar ¾ cup raisins (optional) ¾ cup chopped walnuts (optional) Icing: 2 cups icing sugar 3 tbs melted butter ½ tsp vanilla extract 3 tbs milk DIRECTIONS 1.) In saucepan, heat 1 cup milk, water, and ¼ cup butter until very warm (butter doesn’t have to be completely melted). Place milk mixture, eggs, sugar, salt, flour and yeast in the bread machine. Select dough cycle. START 2.) Once dough cycle is complete, remove the dough from the bread machine. Punch down (wonderful therapy), and divide into 2 parts. On a floured surface, roll each part into a large rectangle. Smear each rectangle with the softened butter. Combine the cinnamon and sugar, and sprinkle over the rectangles. Then sprinkle nuts / raisins. 3.) Roll the dough up into 2 logs, starting at the long side. Cut each log into 12 slices. Place the rolls cut side down into 2 9X13 greased baking pans. Cover with tea towel, and let rise in a warm place until almost doubled (approx 30 mins). (I let my oven heat up to 170F, then turn the oven off, and place the rolls inside for 30 mins). 4.) Pre-heat oven to 375F (190C) and bake for 20-25 mins or until golden. (check underneath to make sure that they’re not burning) 5.) When buns are completely cool, dip in icing.
